Ovens
Gas
or electricity usually powers conventional "thermal" ovens. A conventional
gas oven is heated by combustion, which requires a continual flow of fresh
air into the cooking compartment. In comparison, a conventional electric
oven is often referred to as a radiant oven, with a heating element at
both the top and bottom. Electric ovens are preferred over gas because
they provide heat more evenly and can be better regulated thermostatically.
