Traffic
and Workflow
This
section covers minimum clearances for doorways, walkways, work aisles
and seating areas as well as explains the suggested dimensions for the
work triangle. If you plan for more than one cook, a work triangle should
be planned for each cook. This configuration usually calls for a second
sink and more than one cooking unit. The refrigeration unit can be shared,
but it should be planned at the end of the leg of both triangles so they
do not cross. See Guidelines 1-5, NKBA's
Kitchen Planning Guidelines, and "Kitchen Planning Dimensions" at
Homestore.com.
